INCLINE VILLAGE, Nev. — Hyatt Regency Lake Tahoe Resort, Spa and Casino announces the launch of “Food. Thoughtfully Sourced. Carefully Served.”, a company-wide food and beverage initiative that offers healthy and sustainable food and drink options for guests and associates.
The program focuses on sourcing and providing fresh, local food and beverage selections, while in turn supporting the local community and the environment. As part of this new philosophy, For Kids By Kids is the program’s exclusive children’s menu, which in an effort to focus on tiny locals and travelers, includes nutritious, healthy and interactive offerings that are tested and approved by children.

At the resort’s renowned lakefront restaurant, Lone Eagle Grille, Chef de Cuisine Rick Koplau incorporates the new “Food. Thoughtfully Sourced. Carefully Served.” philosophy by using more locally-sourced ingredients that complement the restaurants exquisite High Sierra cuisine.
Highlights from the new summer menu summer include: seared king salmon, cherry tomatoes, zucchini, sliced red potatoes, and sauce choron; grilled bone-in pork loin, natural bacon, sauteed king trumpet mushrooms, parmesan polenta cake, roasted plums, wild arugula, and sauce pistou; and spring lamb rack, buttered marbled potatoes, heirloom baby carrots, and natural lamb jus.
Sierra Cafe, Hyatt Lake Tahoe’s newly-renovated restaurant, also implemented the new philosophy in their breakfast, lunch and dinner menus. Highlights from the new menu include: grilled natural sage chicken breast, mixed grains, rice, and aromatic herb jus; grilled five ounce filet mignon, jumbo prawn, sauteed spinach, garlic mashed potatoes, and merlot demi-glace; and lemon roasted all natural half chicken, onions, carrots, asparagus, new potatoes and lemon jus.
Implementation of the philosophy also includes sourcing and serving meat without supplemental growth hormones or antibiotics, cage-free eggs, sustainable seafood, and fresh local ingredients that reflect the season and local flavors.
For Kids By Kids
Hyatt Lake Tahoe’s For Kids By Kids menu offers a creative way for children to engage with their food, such as customizing their own pasta dish and “shaking” their own salad. In keeping with Hyatt’s Food. Thoughtfully Sourced. Carefully Served. philosophy, the new kids menu will have healthy and quality menu items including:
• Breakfast: Top your own taco with whole wheat tortilla filled with scrambled eggs, cheese and fun toppings; waffle dipping sticks with peanut butter, maple syrup and fruit sauces.
• Lunch: Shaken chopped salad with roasted chicken, vegetables, brown rice and yogurt basil dressing; build-your-own whole wheat sub sandwich with turkey, lettuce, tomato, cheese on a whole wheat mini-sub.
• Dinner: Natural beef grilled and served with potatoes, roasted vegetables and garden salad; vegetable and sesame rice noodles with marinated tofu, corn, green beans, basil and cherry tomatoes.
• Organic menu: Designed and developed by world renowned chef Alice Waters, the menu offers healthy options of a salad, chicken entree and dessert.
Additional highlights of the For Kids By Kids healthy campaign will include fruit and vegetables as side dishes, no refills on soda, and only low-fat milk.
