Smoothies are a favorite meal on the go because they are an easy way to get your vitamins and nutrients all in one cup. I’ve been seeing beautiful images of smoothie bowls recently, and it seems like a great way to enjoy a smoothie when you have more time.

I use a Vitamix for blending, which makes all the difference in the world. It truly pulverizes the raw beet and spinach into a wonderful smooth texture. If you have a simpler blender, just chop the beet into small pieces and it should work just fine.
