What’s Cookin’ at Callie’s Cabin: Old-fashioned waffles for a new year

As we bring in the New Year, what better way to warm up and enjoy breakfast with homemade waffles? There are a wide variety of waffles from around the world to choose from, but ones made with buttermilk are ideal for winter.
When I was a kid, my mother used to make waffles from scratch on Sunday mornings. Foods were different back in the 50s. Back in the day, I could smell coffee brewing, hear bacon sizzling to pair with home-squeezed orange juice and large round waffles. It was a meal I adored, sitting down with my siblings and parents, but I’ve gone through changes with waffles, family members and foods.
On the South Shore, it used to be whole-grain frozen store-bought circle-shaped waffles that I’d put in the toaster and in a New York minute enjoy a quick fix. Then, I graduated to a mix in a box and added a few quickie ingredients to attempt getting the waffles my mother used to make. Not to forget the waffles at the breakfast bar in a hotel, or the ones served lukewarm via pricey room service. And then, I finally got a waffle iron and entered waffle world. This week using premium buttermilk, honey, fresh berries, real butter, and pure syrup made my waffle adventure worth the effort.
These waffles not only provide healthful berries (the price is reasonable considering they’re off season), but they offer much more than nutritional perks. Some people believe that circle-shaped foods, from waffles to berries (especially red), can bring good luck and good fortune in the New Year.
TRIPLE BERRY BUTTERMILK WAFFLES
1 brown egg
3/4 cup premium low-fat buttermilk
1 tablespoon honey
1 cupful of pure vanilla extract
1 1/2 teaspoons baking powder
1 cup all-purpose flour (or use 1/2 whole wheat)
1 to 1 1/2 cup blueberries, cranberries, blackberries or raspberries
Syrup or honey, butter (to taste)
Mint for garnish
In a large bowl, combine beaten egg, milk, honey and vanilla. Add dry ingredients. Fold in half of the berries; save the rest for topping. Heat nonstick waffle iron. Put in 1/3 cup of batter. Wait till steam stops, remove. Best served hot with butter, berries, and syrup or honey. Serves 2-3 (or double the recipe).
These waffles are crisp and golden brown on the outside and have a nice light texture on the inside. The berries are sweet and there’s no need for sugar in the recipe because the honey suffices with the fruit and syrup. Serving waffles as a whole circle is nice or plated by topping four triangles gives this special breakfast a nice new flair for the New Year.
