Yummy Fixins: Memorial weekend grilling

Spend the weekend with your friends and family remembering the men and women in the Armed Forces who served to protect us and our country. Make it special, break out the grill and cook up something delicious for your family.

Grilled Tri-Tip with Chimichurri and Salsa

Makes four servings



Chimichurri

1 1/2 cups flat leaf parsley



1 cup cilantro

6 cloves garlic, minced

1⁄4 cup red wine vinegar

1/4 tsp red pepper flakes

1 tsp dried oregano

1/2 tsp black pepper

1⁄2 tsp salt

2⁄3 cup extra virgin olive oil

Pulse parsley, cilantro, garlic and seasonings in a food processor, slowly pour in the olive oil and pulse until the mixture is finely chopped. Adjust seasoning as needed. Cover with plastic wrap and set aside.

Tomato Salsa

1 cup cherry tomatoes, halved

3 garlic cloves, minced

1/2 lemon zested

1 tbs lemon juice

1/4 cup olive oil

1/4 cup fresh oregano

Salt and pepper

Combine salsa ingredients in a small bowl and mix well. Cover with plastic wrap and set aside.

Tri-Tip

8 garlic cloves, minced

3 tbs olive oil

1 tsp salt

1 tsp pepper

1 tri-tip

Combine garlic, oil and seasoning in a bowl. Pat the meat dry with paper towels and rub the garlic mixture coating the whole tri tip. Wrap in plastic wrap and let it rest in the refrigerator for at least one hour. When ready to grill, let the tri tip come to room temperature. Set grill burners to high and let it heat up for 15 minutes. Wipe the garlic mixture off the tri tip, then rub the meat with a little more salt and pepper. Place the tri tip on the grill and cook for 10 minutes on each side. Turn the burners down to medium heat and cook for another 15 minutes. Check for doneness with a thermometer. For medium, remove the meat when the thermometer reads 135 degrees. Tent with foil and let it rest ten minutes before slicing. To serve; slice the trip tip in half-inch slices. Lay the meat on a platter with the Chimichurri and salsa on the side.
