Yummy Fixins: Going Greek

This healthy falafel recipe is a great go-to when trying to impress any vegan and vegetarians in your life. It’s packed full of protein and tastes delicious. A great accompaniment for your falafel is tabbouleh, a super simple and good for you side dish that takes no time at all and tastes better the longer it sits. Another yummy addition to this meal is warm pita bread spread with a kalamata olive tapenade.

Baked Falafel and Tabbouleh With Tzatziki

Makes four servings



Tabbouleh

1 ½ cups bulgur wheat, rinsed



2 ½ cups water

¼ cup olive oil

¼ cup lemon juice

zest from 1 lemon

2 tomatoes, diced

3 cups parsley, chopped

Salt and pepper

Bring water to a boil. Place the bulgur wheat into a heatproof bowl, pour in the boiling water, lemon juice, zest and olive oil. Season with salt and pepper then cover with a tight lid or plastic wrap. Let sit for 30 minutes to an hour. Once the bulgur is fluffy and cool, add the parsley and tomatoes. Taste and season as needed. Cover and refrigerate until ready to serve.

Tzatziki

2 cups Greek yogurt

1 tbs lemon juice

¼ cup fresh dill, chopped

½ English cucumber, sliced thin

Mix ingredients together and refrigerate until ready to use.

Falafel

1 can of chickpeas, drained

¼ cup parsley

1/4 cup sesame seeds

1 tbs cumin

½ tsp baking powder

½ small onion

2 garlic cloves

1 cup breadcrumbs

Salt and pepper

Place all above ingredients, except breadcrumbs, into a food processor and pulse until mostly smooth (it is OK to leave it a little chunky). Transfer the mixture from the food processor to a bowl. Taste and season to your liking. Slowly mix in a quarter of the breadcrumbs at a time until you are able to form a ball that will hold together, but is not too sticky. Place the mixture into the refrigerator (while it’s still in the bowl, not yet formed) for at least 30 minutes.

Preheat oven to 400 degrees. Remove the falafel mixture from the fridge and shape into patties or balls then place onto a nonstick baking sheet. Continue until you have used all of the mixture. Bake 40 minutes, flipping once at the halfway point for even cooking. Serve warm, alongside the tabbouleh and tzatziki, and enjoy!
