Food: Make sesame chicken (recipe)

Make sesame chicken in a crockpot.

Break out the crockpot; it’s time to let dinner cook itself. I just love walking in the door and smelling the delicious aroma of a home-cooked meal. With only a little prep you can get this meal ready in the morning and have a yummy dinner when you get home. This recipe is just the protein of your meal, but it’s truly the star. Serve the sesame chicken and its delicious sauce over steamed rice with some sautéed broccoli or with an edamame and cabbage slaw tossed in ginger-miso vinaigrette.

SESAME CHICKEN

Ingredients



4 lbs. chicken breasts

1 tbs. garlic, diced



1 small onion, diced

2 tsp. black pepper

1 cup honey

½ cup ketchup

¼ cup soy sauce

2 tbs sesame oil

½ tsp. salt

1⁄3 cup water

¼ cup corn starch

2 tbs. sesame seeds

¼ cup green onions, chopped

Directions

Season the chicken with pepper. Place the chicken, garlic and onion in the crockpot. In a medium bowl, whisk honey, ketchup, soy sauce, sesame oil, and salt. Pour mixture over chicken and cook on LOW 3-4 hours. After cook time is up remove chicken from the sauce and shred chicken with two forks; set aside.

In a small bowl, dissolve cornstarch in remaining 1/3 cup water; add to the sauce in the slow cooker and stir to combine. Cover and cook on HIGH about 15 to 20 minutes, until slightly thickened; return chicken to the slow cooker and mix well.

Serve chicken and sauce over rice and top with sesame seeds and chopped scallions for garnish.
