Food: Make a green quinoa bowl (recipe)

Looking for something light and healthy to bring to lunch this week? Try this vegan, protein-packed green quinoa bowl. This tasty dish can be made ahead and portioned out for as many meals as you’d like. The basil pesto may oxidize and lose its bright green color, but don’t worry it will still taste yummy.



Makes 4 to 6 servings.

2 cups quinoa, rinsed

4 cups water

2 cups frozen peas

2 cups shelled edamame

4 cups spinach

2 cups sprouts

2 lemons, zested



2 cup basil leaves

¼ cup spinach

¼ cup pine nuts

½ cup olive oil

Pinch of salt


Place basil, ¼ cup of spinach, pine nuts and salt in a food processor and pulse. Slowly pour in the olive oil and mix until you have a smooth paste.

Bring the water and quinoa to a boil, reduce the heat and simmer, covered, until the quinoa is tender and has absorbed the water, about 15 minutes. Remove from heat and let sit for 5 minutes.

Meanwhile, steam the peas and edamame according to packaging instructions. Mix in the peas, edamame and spinach, toss with the pesto and garnish with lemon zest and sprouts.
