Apple Pie

8 cups thinly sliced peeled apples

1 1/2 Tbsp. fresh lemon juice

1/2 cup sugar



1/2 cup brown sugar

2 Tbsp. flour




1 1/2 tps. ground cinnamon

2 Tbsp. butter (cut into small slices)

1 egg white

1 pastry for 9-inch double crust pie

Combine sugars, flour and spices in medium bowl, set aside. Toss apples with lemon juice in a large bowl. Add sugar mixture; toss all ingredients until well coated. Place apple filling into crust. Sprinkle butter slices evenly over apples. Top with second pie pastry. Brush egg white over top of pie. Sprinkle a small amount of sugar and cinnamon over egg white. Bake at 375 degrees for 35 minutes. Increase temperature to 400 degrees and bake 12 minutes longer (crust should be golden).
