EAT This Week: Get Rad Pizza’s Triple Crown ‘Za

To try and decide each week where and what to eat around the basin can be a challenge – there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.

If you’ve never seen a wood fired pizza oven built into a food truck, then this week’s feature gives you a prime reason to go check out Get Rad Pizza. Not only is the set up super cool, but the pizzas getting pushed out are absolutely delicious.

We’ll focus this week on a pizza that was crafted a few years back to be featured at TAMBA’s Mountain Bike Festival. The Triple Crown ‘Za was so well received that they made it a staple on the menu – and for good reason.

Once the dough is laid out, it is topped with mozzarella cheese, gourmet mushrooms, diced bacon, parmesan cheese, and a drizzle of truffle oil. Once the pie gets a few turns in the oven, it is topped with a mound of fresh arugula before serving.

With the pairing of mushrooms and truffle oil, you know there’s going to be some earthiness to this pizza. But the additions of bacon and arugula raises the stakes by balancing out that earthiness with a smoky pepperiness. Don’t sleep on the dual cheeses, either. The salty nuttiness of the parmesan combined with the creamy mozzarella is just what the doctor ordered – yes, doctors eat pizza, too. As for the dough, it walks the line perfectly between chewy and crispy and gets an exclamation mark with the charred pockets from the wood fire.



If this pizza doesn’t move the dial for you, I’d urge you to try out one of their other options – there’s always a pizza that’s calling your name. At least there is for me.
