Recipe for Sour Cream Apple Pie

Tribune reporter Sara Thompson provided this recipe for Sour Cream Apple Pie, which is from family friend Pam Newton of Homer, Alaska. The pie crust recipe is from Sara’s grandmother, Mary Thompson, also of Homer.

Pie Crust

1/2 teaspoon salt

1 1/2 cup flour

1/2 cup shortening

1/4 cup cold water (or about enough to make the dough work)

Mix together the salt and flour; cut in the shortening using a pastry blender or two knives. Add the cold water as needed. Roll out the dough to make a pie crust.

Pie filling

Mix together:

1/8 teaspoon salt

2 tablespoon flour

3/4 cup sugar

Then add:

1 cup sour cream

1 teaspoon vanilla

1/2 teaspoon nutmeg

Beat until smooth. Then add:

3 cups granny smith apples, peeled and sliced, and then add mixture to pie crust (single-layer crust). Bake at 400 degrees for 10 minutes, then at 350 degrees for 30 minutes. Remove pie from oven and add topping:

Topping

1/3 cup sugar

1 tablespoon cinnamon

1/3 cup flour

1/4 cup butter

Mix and press through a strainer so it’s crumbly on top of the pie. Then bake the pie at 400 degrees for an additional 10 minutes.
