EAT This Week: Osteria Sierra’s Bisonte e Pancetta Polpette

To try and decide each week where and what to eat in and around the basin can be a challenge – there are so many amazing choices. In this feature we’ll dive into dishes that will surely satisfy those hunger pangs and leave you wondering where to go next.

Who doesn’t like pasta and meatballs? OK, I can understand why some of you might not (some of you possibly not by choice), but for those of you who are perfectly capable, what’s stopping you? It’s fun, it’s something you probably ate as a child, and if it is as tasty as you remember it being, you owe it to yourself to give this iteration a shot.

This dish essentially translates to bison and pancetta meatballs. And if I didn’t have you at hello, that meaty combination should perk up your senses. After getting rolled up and cooked with a few other ingredients, they are placed on a dish alongside freshly made creste di gallo pasta and pomodoro sauce, then topped with Pecorino Romano cheese, fennel-seed gremolata and fresh basil.



With bison being a bit richer and leaner than beef, it needs some fattiness and saltiness to help balance it out, which the pancetta does to perfection. The combination of flavors, along with the juiciness of the cook, make these meatballs some of the best on the block. Throw in the texture and slight anise notes from the gremolata and everything rounds out seamlessly.

The pasta, whose name means “rooster crests,” is the perfect vehicle for the fresh brightness of the pomodoro. Those little ripples in the shape help to capture the chunky sweetness of the pomodoro so you’re getting maximum coverage on every bite, punctuated with the tangy sharp jolt from the Pecorino Romano.



It may go without saying, but I feel I need to write it out: this dish is best when you get everything in a single bite, including a touch of the fresh basil. Yes, all the components are great on their own, but they start singing in harmony when they get to bounce notes off of each other.
